Sweet Potato "Chips + Dip"

- 3 medium sized sweet potatoes
- Pesto mayonnaise see recipe link above in post
- 1/4 C. avocado or olive oil
- 2 teaspoons salt
- 1/4 teaspoon black pepper
Preheat the oven to 425* F. Line two baking sheets with parchment paper.
Peel and slice sweet potatoes into 1/4 inch discs
Add the sweet potatoes, oil salt and pepper to a large bowl and toss to coat evenly.
Arrange the sweet potatoes into a single layer onto the parchment paper lined baking sheets and place into the oven.
After 20 minutes flip the sweet potatoes to ensure even roasting.
Roast for remaining 15-20 minutes until sweet potatoes are golden brown.
Serve with basil mayonnaise
