Sweet Potato "Chips + Dip"

A paleo twist on your standard chips and dip. Paleo-friendly, gluten-free and vegan!

Ingredients

  • 3 medium sized sweet potatoes
  • Pesto mayonnaise see recipe link above in post
  • 1/4 C. avocado or olive oil
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 425* F. Line two baking sheets with parchment paper. 
  • Peel and slice sweet potatoes into 1/4 inch discs
  • Add the sweet potatoes, oil salt and pepper to a large bowl and toss to coat evenly. 
  • Arrange the sweet potatoes into a single layer onto the parchment paper lined baking sheets and place into the oven.
  • After 20 minutes flip the sweet potatoes to ensure even roasting.
  • Roast for remaining 15-20 minutes until sweet potatoes are golden brown.
  • Serve with basil mayonnaise
