- 3 pounds sweet potatoes peeled and cubed (about three medium potatoes)
- 1/2 cup almond milk creamer regular creamer works if you aren't avoiding dairy
- 2 tablespoons ghee or butter
- 1 teaspoon chai spice
- 1 teaspoon maple syrup
- 1/4 teaspoon salt
Add the sweet potatoes to a large stock pot and fill with water, just enough to cover the top of the sweet potatoes. Bring the water to a boil and boil the sweet potatoes until they are fork tender.
Turn off the heat and drain the potatoes in a strainer. Return the potatoes to the stock pot.
Add the almond milk, ghee/butter, chai, maple syrup and salt to the stock pot. Using a hand blender, mix the sweet potatoes on medium until they are smooth and creamy.
Serve with a small amount of additional ghee or butter over top, a light drizzle of maple syrup and a sprinkle of salt over top.
