Chili Lime Watermelon Salad

Ingredients

  • 10 cups watermelon cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoon lime juice
  • 1 tablespoon chile lime seasoning such as Tajin or Trader Joe’s Chili Lime Seasoning
  • 1/2 teaspoon salt
  • 1/2 cup queso fresco
  • 1/3 cup cilantro

Instructions

  • Add the olive oil, lime juice, chili lime seasoning and salt to a small bowl and stir to combine.
  • Add the remaining ingredients to a bowl and drizzle the dressing over. Toss lightly to coat.
  • Refrigerator 2 to 3 hours prior to serving. To serve, re-toss the watermelon and serve.

Notes

  • Feel free to use fresh peaches in place of watermelon. The flavors work just as beautifully with peaches as well. You may need to adjust the amount of dressing depending on how many peaches you use.
  • Make this salad about 2 to 3 hours prior to serving and store in the refrigerator to let the flavors marinate together.
  • Goat cheese makes a great substitute for queso fresco.
