Pesto Cauliflower Cauliettes + Blistered Tomatoes

- 1 14 oz. bag of Mann's Culinary Cuts Cauliflower Cauliettes
- 1 C. pesto
- 1 Tbsp. olive or avocado oil
- 1 C. cherry tomatoes
- Salt to taste
Cook cauliflower cauliettes according to package instructions
Heat a sauce pan to medium-high heat
Add oil to pan
Once oil is hot, add cherry tomatoes and let sit in pan for a minute to blister skin
Continue to stir tomatoes every minute or two to blister evenly and set aside
Add cauliflower cauliettes to a large bowl and add pesto
Toss to combine thoroughly
Salt to taste
To serve portion out and top with blistered tomatoes
