Grain-Free Greek Bruschetta from the Whole Smiths. A fresh twist on the classic using Simple Mills Artisan Bread Mix. Gluten and grain-free, paleo-friendly.

- 1 box of Simple Mills Artisan Bread Mix prepared according to package instructions
- 2 C. diced fresh tomatoes
- 1/3 C. red onions
- 1/4 cucumber chopped
- 1 Tbsp. chopped dill
- 1/3 C. kalamata olives chopped
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 C. crumbled organic feta cheese
Make Simple Mills Artisan Bread Mix according to instructions on back following the directions for the "loaf" preparation
Let loaf of bread cool
Meanwhile add tomatoes, red onion, cucumber, dill, olives, and salt to a large bowl and toss to coat
Slice cooled loaf into 1/2 inch thick slices and arrange on a baking sheet
Broil on low for 1-2 minutes on each side
Remove and top with bruschetta filling
Sprinkle with optional feta if desired
