Grain-Free Greek Bruschetta from the Whole Smiths. A fresh twist on the classic using Simple Mills Artisan Bread Mix. Gluten and grain-free, paleo-friendly.

Ingredients

  • 1 box of Simple Mills Artisan Bread Mix prepared according to package instructions
  • 2 C. diced fresh tomatoes
  • 1/3 C. red onions
  • 1/4 cucumber chopped
  • 1 Tbsp. chopped dill
  • 1/3 C. kalamata olives chopped
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 C. crumbled organic feta cheese

Instructions

  • Make Simple Mills Artisan Bread Mix according to instructions on back following the directions for the "loaf" preparation
  • Let loaf of bread cool
  • Meanwhile add tomatoes, red onion, cucumber, dill, olives, and salt to a large bowl and toss to coat
  • Slice cooled loaf into 1/2 inch thick slices and arrange on a baking sheet
  • Broil on low for 1-2 minutes on each side
  • Remove and top with bruschetta filling
  • Sprinkle with optional feta if desired
