Cottage Cheese Chili Queso
This Cottage Cheese Chili Queso recipe from The Whole Smiths is not only mouth-watering delicious, but it's loaded with protein and ingredients you can feel good about. It's great to serve with tortilla chips, your favorite veggies or on top of some toast.
Servings: 6 servings
- 2 cups cottage cheese
- 2 cups shredded extra sharp cheddar
- 1 ½ tablespoons lime juice
- 2 tablespoons diced jalapenos + 2 teaspoons of jalapeno juice
- 1/2 tablespoon chili powder
- 1 ½ teaspoons salt
- 1 teaspoon smoked paprika
- ½ teaspoon cumin
- ¼ teaspoon cayenne
- 1 medium tomato diced and de-seeded
- 2 tablespoons diced jalapenos
Add the cottage cheese, cheddar cheese, lime juice and seasonings to a blender and blend until combined.
Add the diced tomato and jalapenos with juice and blend until combined.
Serve with your favorite chips, tostones, bell peppers, chicharones, or whatever your favorite dipping vehicle is.
