Strawberry Arugula Salad + Strawberry Champagne Dressing

Ingredients

  • 1/4 C. olive oil
  • 1 Tbsp. champagne vinegar
  • 1/4 tsp. salt
  • 1 Tbsp. honey omit for Whole30
  • 4 large strawberries
  • 1 Tbsp. almond milk
  • 1 tsp. poppy seeds
  • 4 C. baby arugula
  • 1/2 C. sprouts
  • 1 C. snow peas
  • 2 C. quartered strawberries
  • 1/4 C. raisins
  • 1/4 C. marcona almonds

Instructions

  • Add olive oil, champagne vinegar, salt, honey, strawberries, almond milk to a blender and pulse until emulsified and combined
  • Add poppy seeds in a pulse one time to incorporate into dressing
  • Toss arugula, sprouts, snow peas, strawberries, raisins, and almonds in a large bowl
  • Plate and top with strawberry champagne dressing
