Every time that I post a dip recipe I immediately start singing, “when I dip, you dip, we dip”. Every time. It never fails. And every time I feel the need to let you know. Perhaps it’s because I’m hoping to not be the only one singing Quad City DJs for the remainder of the day? I’m not sure. Either way, all apologies.

I recently had the chance to try out Jackson’s Honest brand new Rippled Red Heirloom potato chips and I’m in love. I have to confess, I’m a chip girl. Some people like cookies and chocolate but chips have always been my thing. I’m pretty sure my love of chips is what drives part of my love for football (chips and Gronk of course 😉 ). It’s my excuse every Sunday to whip out a bag of chips and have at it. What can I say? It’s my biggest vice.

Until now! Jackson’s Honest chips are made with coconut oil not some franken-oil like all of the other chips. How cool is that? The ingredients are nice and clean so you can snack guilt-free. I’m pretty sure this football season is going to be EPIC. Now if only the Niners can get their act together.

But along with my love of chips come a love of things to dip them into. And again, a packaged ranch dip from the store has always been another vice of mine. Quite honestly it’s the only packaged food with lots of crap in it that I continue to buy… during football season. If you’ve ever looked at the ingredients in one of those, it’s no bueno. It’s been my last stand I guess you could say.

So now that I have a healthy chip to snack on, I realized it was time to come up with a healthy dip to go alongside it and pledge to never buy that other stuff again. What better flavor to go with than a traditional ranch? Everyone loves them some ranch! I used my 30-Second Olive Oil Mayo as the base for this. Click on over there for that recipe. I wanted this dip to taste fresh and pack a punch so I used lots of fresh herbs and added some bacon in for some extra… protein? 😉

One thing that chip aficionados (like me) will appreciate is that these chips can actually hold their dip and don’t break into the dip when you dig in. It’s such a pet peeve of mine… especially when you’re coming to the bottom of the dip and you see someone’s soggy piece of chip floating around in the bottom. Gross! Have I lost you yet? Or do you know EXACTLY what I’m talking about? I told you I have a thing for chips… hopefully you believe how deep that love runs now.

Anyways, besides being beautiful I’m digging the fact that I now have a chip I can enjoy guilt-free and give the kids without feeling like a bad mom. Jackson’s Honest, you rock!

Paleo Loaded Ranch Dip

Ingredients

  • 1 C. homemade mayo see recipe link in post
  • 2 Tbsp. fresh dill
  • 2 Tbsp. fresh parsley
  • 1 Tbsp. fresh chives
  • 2 cloves of garlic
  • 1/4 tsp. onion powder
  • 1/4 tsp. garlic powder
  • 1/2 tsp. salt
  • 4 slices bacon cooked

Instructions

  • Add cooked bacon to a food processor or high-powered blender and pulse for bacon "bits"
  • In a tall mason jar combine mayo, dill, parsley, chives, garlic, onions powder, garlic powder and salt
  • Using a hand blender (or food processor), pulse until all ingredients are combined
  • Add bacon in and pulse one time to combine
  • Serve with your Jackson's Honest chips!
