3-Minute Strawberry Mug Cake from the Whole Smiths. No-bake, gluten/grain-free, paleo friendly and no refined sugars. A MUST try!
Back before I had kids I was ahead of the curve on most things. Music, food, fashion whatever. (Ie I USED to be cool.) I liked Robin Thicke years before he was a douche bag and loved John Legend back when I could still get seats up close and personal at his concerts. But now, I’m usually a little behind in the game. So it’s no surprise that it took me so long to jump on this mug cake bandwagon. I mean, 3 minute individual cakes you can make at any time? It’s probably a blessing I didn’t know about the wonders of the mug cake earlier.
I decided my first mug cake was going to be a banana mug cake from the Roasted Root. And it was delicious. Too delicious. I needed to make more mug cakes. So then I made this chocolate one from Paleo Grubs. When I found out this week’s One Day Sale Item at Whole Foods would be strawberries I realized that I needed to put my newest addiction to work. Unfortunately in paleo baking (or any baking for the matter) it’s not quite as easy to just swap one ingredient out for another. So I had to switch the recipe up a bit for the best consistency and flavor. And even the tiniest change can make it magical or… garbage. There’s a lot more water content in the strawberries so it made it a little difficult. After like four or five attempts and two mug cake bricks, I cracked the strawberry mug cake (can you tell I like saying “mug cake”?).
I also topped this with some fresh whipped coconut cream for a strawberry shortcake like dessert. You can find the coconut cream recipe HERE. Have you tried that out yet? It’s so easy. It’s also a great way to enjoy some fruit. I’ll whip up a batch and dip strawberries or baby oranges into it. It’s delicious. But I digress…
I’m supposed to be talking mug cakes! So yes, make this. Top it with your delicious whipped topping enjoy it at 10pm while you’re watching Millionaire Listing: NY and wondering when Ryan Serhant stopping being so damn annoying. Huh? What am I talking about, I never eat after 7pm! Pffft. (And if you believe that, I have a unicorn to sell you.)

3-minute Paleo Strawberry Mug Cake
A 3-minute strawberry mug cake made using almond & coconut flour that you can make in your microwave. It's paleo and gluten-free.
- 5 large strawberries
- 1 egg
- 1 Tbsp. honey
- 1 Tbsp. coconut flour
- 2 Tbsp. almond flour
- 1 tsp. vanilla
- 1/4 tsp. baking powder
- Using a fork, smash strawberries into a bowl and strain out extra liquid
- In a bowl whisk egg and honey together
- Once whisked add strawberries, flours, vanilla and baking powder and combine thoroughly
- Pour batter into ramekin or mug and microwave for 3 minutes
- Cake will be hot so make sure to let it cool after
