Chicken Tortilla-less Soup

I’ve come to realize that MOST soups end up being fairly clean on their own. Perhaps not a cheddar beer soup or a clam chowder, but so many others naturally consist of a broth, meat and veggies. At the very least, they’re easy to convert into a healthy bowl or comforting goodness. And that’s exactly what I did with this Chicken Tortilla-less Soup.

When my friend Monica from the Movement Menu was up visiting as part of a blogger’s field trip we decided to create a clean version of a Chicken Tortilla Soup. Obviously I had to remove the cheese and tortilla chips that one usually finds in a traditional version but I also wanted to add in some additional veggies and nutrients like kale and sweet potatoes.

Two things to note. One, try roasting your own whole chicken for this recipe. You’re bound to have leftover chicken to use in other recipes through the week and it just pain tastes better. If you’re in need of one, I reccomend my Whole Smiths’ Whole Roasted Chicken. However, it’s not a necessity and if you prefer to use a rotisserie chicken from the store, by all means go for it. Just make sure to check the labels on it. Whole Foods has great, clean chickens without funky additives. As far as a mexican seasoning, use whatever you have on hand or find at the grocery store. There is not one specific brand I recommend. As an alternative you can Google “mexican seasoning” and make your own based on what you already have on your spice rack.

The final result came out delicious! It tastes just like any other tortilla soup you may have had in the past but now you can gulp it down knowing you’re fueling your body with nothing but good stuff. I say that’s a win-win all around.

And ever better news it that it’s Whole30 compliant for you.

chicken tortilla-less soup

A clean, gluten, grain and dairy free version of the original Chicken Tortilla Soup.

Ingredients

  • 1 Tbsp. ghee / butter / cooking oil
  • 1 onion diced
  • 1/4 C. poblano peppers finely chopped
  • 1 red pepper diced
  • 3 cloves of garlic minced
  • 1 TBSP mexican seasoning
  • 16 oz diced tomatos I prefer San Marzanos
  • 1 4 oz can diced green chiles
  • 4 C. shredded chicken
  • 32 oz organic chicken broth
  • 2 C. chopped kale
  • 1 sweet potato diced and roasted
  • 1/4 C. chopped cilantro + more for garnish
  • 1 avocado diced optional

Instructions

  • Heat a large stock pot to medium heat and add ghee / butter or oil
  • Once oil is heated, add onions and cook until translucent and lightly browned
  • When onions are cooked though add poblano peppers, red peppers and cook until softened
  • Once soft, add the garlic and cook until tender making sure not to burn
  • Add mexican seasoning and toss to coat
  • Add can of diced tomatoes and green chiles and cook for 3 minutes
  • Once cooked add shredded chicken and chicken broth / stock
  • Bring pot to a boil, once boiling turn heat down add kale and simmer for 10 minutes
  • Add sweet potatoes, cilantro and stir
  • Heat for another 5 minutes
  • And you're done!
  • Serve with avocado on top if you'd like

    This looks really good. My question is about the red pepper. Is it supposed to be a red bell pepper or a red spicy pepper? Thanks!

    This soup was phenomenal! I stirred in a tablespoon of sour cream and turned it into a cream soup. Everyone in my family loved it. Try roasting your poblano and red peppers before adding to soup. I did the whole recipe in the crock pot. Easy!

    This was amazing! I made it as part of my weekly meal-prep for a #whole30, but my boyfriend ate three bowls for dinner. Next time, a double batch! Also, I used a whole poblano and added a dash of cayenne, and used shredded chicken thighs that I poached. Definitely in the rotation!

    This soup is a huge hit with the family! Thank you for sharing it. It is in our rotation regularly. I wasn’t sure the kids and hubs would like the kale or sweet potatoes but had to try it. They LOVED it! Whole30 easy!

      There are a variety of mexican or hispanic food blends. You can also use a combination of cumin, paprika, pepper, cayenne.

Seriously though! Let’s have a stinky convo, h Seriously though!  Let’s have a stinky convo, huh?  As soon as I started cleaning up my food perspective, cleaner personal care products came into my world as well.  I didn’t even really think twice about it before but those worlds tend to collide. So here I am today not only mindful of what I put INTO my body (food) but the stuff I’m putting ONTO my body (products).  Deodorant was the first thing I swapped as the ingredients and effects of traditional anti-perspirants were most alarming to me.  But I was suuuuuuuper hesitant. I was not a person who rarely sweated. I was! In workouts or just through the day. I even carries a travel anti-perspirant in my purse during the day.  And yeah, that end of day weird smell of anti-perspirant “powder fresh” scent mixed with whatever was goin on in my body was... not good. You KNOW what I’m talking about!  So I was reeeeeeally hesitant about switching to cleaner products.  But it really was the best thing ever. It took a some time, I’m not going to lie. It took time to fond the right ones that didn’t irritant my skin and ones that... actually worked!  Today I use Beautycounter’s newly released refillable deodorants as well as Stank Stop from @fatco. I use both and honestly it pretty much comes down to which scent I’m favoring that day, that dictates my choice.  They both work fab for me and don’t leave stains on my clothing, smell nice and don’t irritate my skin.  And here’s what else, I do not sweat NEARLY as much as I used to. I was worried I would be a sweaty pig to put it lightly. But after time, my body adjusted and it’s really not even a problem. And no smell. It works!  And here’s the thing... WE ARE SUPPOSED TO SWEAT PEOPLE! So when we wear anti-perspirant I can imagine that throws off our natural balance.  So if you’ve been hesitant, give it a try! Unh, ahh Sweet Potato ...Hash. An oldie but good Unh, ahh Sweet Potato ...Hash.  An oldie but goodie.  One of my first recipes to “go viral” was this Sweet Potato Hash. With good reason, it’s so freaking good!  I made it multiple times a week in the early days of this website and it’s kinda trailed off for no good reason.  Time to bring it back.
