Who doesn’t love a giant salad?? This one in particular is delicious for a midday lunch but it’s also beautiful enough for a festive Easter brunch, bridal shower or good ‘ol potluck. So basically anytime. It’s like that little black dress you can dress up or down.

I’m trying to think of a fun salad story to tell you in this post but I’m struggling. I mean, salads ARE known to be the most fun of all foods right? Speaking of which… why do they have such a bad rap when you order one on a date? I remember people making that joke as far back as high school when we would go to homecoming. HELLO?! That just means your dates loves delicious, healthy food and is a #keeper.

I digress. The most fun salad story I can come up with is from when I lived in San Francisco. There’s a local chain called Pluto’s and I would eat there roughly 3-4 times a week whether it was for lunch or dinner. 99.99% of the time I would get a large salad and I’d always pick steak as my protein. They’d always ask how you’d like it cooked and I (as well as everyone else I ever heard) answered back “medium” from which they’d announce it through the small restaurant… “MEDIUM!”. Basically it was a running joke and today I can still hear the chant of “MEDIUM!” stuck perpetually in my head.

Ok, so that salad story isn’t that funny and is a classic case of “you had to be there”. I get it. Why don’t we just move on to THIS salad instead? It’s not funny but it is delicious.

Let’s be real, every good salad starts with a good dressing. You can have all of the best components in your salad but if your dressing sucks… your salad sucks. Luckily this dressing is just as amazing, if not better, than the components. To make it I used my magic equation for the perfect creamy salad dressing; my 30-Second Mayo + New Barn Organic Unsweetened Almondmilk. By using those two components I can create the perfect base for anything dressing whether it’s a Whole30 Bacon Ranch Dressing or this Dill + Cracked Black Pepper Dressing.

Not only does New Barn Organic Almondmilk create the perfect base to thin this dressing out a bit but the taste is perfection. So often I see people using coconut milk in their dressings but for me personally, I’m not a fan of the coconutty flavor it brings to the dressing. New Barn’s Unsweetened variety has the perfect neutral taste and it won’t interfere with the other flavors you’re adding to the dressing. Not only is the flavor clean the ingredients are too. New Barn’s line of almond milks are the closest I’ve had to homemade almond milk; the texture, the taste, the ingredients. So for active families like ours it’s a staple in our fridge.

We’ve covered dressing now let’s move on to the components. This is where you can customize it a bit if you’d like and make it your own. I had thought about adding avocados to it but I realized that was just a case of add avocados to everything and it didn’t exactly fit into this salad but if you want avocados? By all means, go for it. I’m also going to give you the option to either remove the peas from it to make it Whole30 compliant (peas are legumes, legumes are a no-go you can read more at their site HERE) or you can make it really not Whole30 compliant and a a bit of crumbled goat cheese to it.

Ingredients

  • 1/2 cup 30-second mayo
  • 1/4 cup New Barn Organic Almondmilk
  • 2 tablespoons fresh dill chopped
  • 1 clove garlic minced finely
  • 1/2 teaspoon fresh cracked black pepper
  • 1/4 teaspoon salt
  • 1 head of bibb or butter lettuce leaves dismantled and removed from stem
  • 1 cup snap peas
  • 1/2 cup fresh peas
  • 1/2 cup sprouts
  • 4 hardboiled eggs halved
  • Goat cheese to crumble on top optional

Instructions

  • Add the mayonnaise, almond milk, dill, garlic, black pepper and salt to a bowl and whisk thoroughly until well combined. Set aside.
  • To assemble the salad place the lettuce leaves onto a large plate and layer the peas, sprouts, eggs and (optional) goat cheese over top. Serve with the Dill + Cracked Black Pepper Dressing.
