Who doesn’t love a giant salad?? This one in particular is delicious for a midday lunch but it’s also beautiful enough for a festive Easter brunch, bridal shower or good ‘ol potluck. So basically anytime. It’s like that little black dress you can dress up or down.

I’m trying to think of a fun salad story to tell you in this post but I’m struggling. I mean, salads ARE known to be the most fun of all foods right? Speaking of which… why do they have such a bad rap when you order one on a date? I remember people making that joke as far back as high school when we would go to homecoming. HELLO?! That just means your dates loves delicious, healthy food and is a #keeper.

I digress. The most fun salad story I can come up with is from when I lived in San Francisco. There’s a local chain called Pluto’s and I would eat there roughly 3-4 times a week whether it was for lunch or dinner. 99.99% of the time I would get a large salad and I’d always pick steak as my protein. They’d always ask how you’d like it cooked and I (as well as everyone else I ever heard) answered back “medium” from which they’d announce it through the small restaurant… “MEDIUM!”. Basically it was a running joke and today I can still hear the chant of “MEDIUM!” stuck perpetually in my head.

Ok, so that salad story isn’t that funny and is a classic case of “you had to be there”. I get it. Why don’t we just move on to THIS salad instead? It’s not funny but it is delicious.

Let’s be real, every good salad starts with a good dressing. You can have all of the best components in your salad but if your dressing sucks… your salad sucks. Luckily this dressing is just as amazing, if not better, than the components. To make it I used my magic equation for the perfect creamy salad dressing; my 30-Second Mayo + New Barn Organic Unsweetened Almondmilk. By using those two components I can create the perfect base for anything dressing whether it’s a Whole30 Bacon Ranch Dressing or this Dill + Cracked Black Pepper Dressing.

Not only does New Barn Organic Almondmilk create the perfect base to thin this dressing out a bit but the taste is perfection. So often I see people using coconut milk in their dressings but for me personally, I’m not a fan of the coconutty flavor it brings to the dressing. New Barn’s Unsweetened variety has the perfect neutral taste and it won’t interfere with the other flavors you’re adding to the dressing. Not only is the flavor clean the ingredients are too. New Barn’s line of almond milks are the closest I’ve had to homemade almond milk; the texture, the taste, the ingredients. So for active families like ours it’s a staple in our fridge.

We’ve covered dressing now let’s move on to the components. This is where you can customize it a bit if you’d like and make it your own. I had thought about adding avocados to it but I realized that was just a case of add avocados to everything and it didn’t exactly fit into this salad but if you want avocados? By all means, go for it. I’m also going to give you the option to either remove the peas from it to make it Whole30 compliant (peas are legumes, legumes are a no-go you can read more at their site HERE) or you can make it really not Whole30 compliant and a a bit of crumbled goat cheese to it.

So while this salad may not be funny it IS delicious. If you’re looking for the key to making magical dairy-free dressings make sure to grab a bottle of New Barn Organic Unsweetened Almondmilk on your next grocery run. Or your next Target run because you can find their products there now as well.

Giant Green Salad with Dill + Cracked Black Pepper Dressing

Ingredients

  • 1/2 cup 30-second mayo
  • 1/4 cup New Barn Organic Almondmilk
  • 2 tablespoons fresh dill chopped
  • 1 clove garlic minced finely
  • 1/2 teaspoon fresh cracked black pepper
  • 1/4 teaspoon salt
  • 1 head of bibb or butter lettuce leaves dismantled and removed from stem
  • 1 cup snap peas
  • 1/2 cup fresh peas
  • 1/2 cup sprouts
  • 4 hardboiled eggs halved
  • Goat cheese to crumble on top optional

Instructions

  • Add the mayonnaise, almond milk, dill, garlic, black pepper and salt to a bowl and whisk thoroughly until well combined. Set aside.
  • To assemble the salad place the lettuce leaves onto a large plate and layer the peas, sprouts, eggs and (optional) goat cheese over top. Serve with the Dill + Cracked Black Pepper Dressing.

Including myself. After that, I asked people to Including myself.  After that, I asked people to elaborate if they were willing. I received hundreds of messages with similar themes.  Increases in levels of anxiety, negativity, loneliness. Parents struggling working from home while managing distance learning. Despair, monotony. Unappreciated teachers. People experiencing loss of loved ones on top of it all.  Changes in tolerances levels of what we were willing to accept in relationships and society. Reevaluating careers, relationships and more.  Reading all of your messages, I kept finding myself saying “Uh huh, yep, totally, me too”. I didn’t feel so alone in this and wished I could share all of the responses with you as well.  So let’s do it here. If you’re comfortable, share in the comments how you’re feeling. Others are in the same boat and it helps knowing you are not alone.  In the meantime, it’s something to start turning around. For all of us, and I firmly believe we can. I’m planning to start finding guests and topics for @getwellthypodcast that will help us address this.  I’m also going to share one (little) thing on my stories every day that brings me joy or happiness. My hope is that it will help trigger something in *your* day that brings you joy that you can focus on. I encourage you to share your moments and tag me as well.  I firmly believe all of this will make us stronger in, we just need to actively pull out of this to get there.

Like this Thousand Island Wedge Salad. 🥰  I love me a wedge salad but sometimes hate that it doesn’t feel like a complete meal... so I changed it up a bit and added some egg for protein. I know it’s all about Brady and Gronk right now I know it’s all about Brady and Gronk right now (blah) but here’s a throwback to when @thepetitepanaderya and I got to be a part of the SB Halftime field team crew in 2016.  It has always been on my bucket list to be on the field for the Halftime show, so when SB was here in Santa Clara, I was going to find a way.  I saw you could sign up to be a part of the field team that puts together the stage so I signed up. It was two weeks of practicing and they paid us minimum wage, although I would have done it for free.  A few hundred people were part of it and we were each assigned to a “cart”. We were taught exactly what to do, how to assemble the various parts of the stage and QUICK. It all had to be put together in around 7 minutes.  We weren’t allowed to have any cell phones out during practices and signed confidentiality waivers. The second week we got to watch the performers rehearse (over and over again). JayZ and Blue Ivy were in the stands watching. Bruno Mars was perfection and nailed everything every time. I was blown away at how talented he was live. Chris Martin was so kind. Beyoncé drove in front of us in her golf cart and waved. She also made us wait in the freezing cold while she tried different hair and fan / wind blowing situations.  Game day. There was a staging area a few miles away that we met at and we were bussed in with police escorts down the 101.  Once at the stadium we hung out with our carts waiting our turn. Everyone was so pumped. As SOON as the second quarter ended it was go time and the adrenaline was pumping. Seriously, that feeling was awesome.  Lucky for us, once we finished building our cart we had wait on the sidelines... right in front.  The energy was intense and I loved every minute of it.  Bigger picture, seeing how everyone worked together flawlessly to create the performance was striking. I’ve never experienced teamwork like this and never thought it would be such an impactful experience.  It was one of the BEST things I’ve ever done as silly as it sounds. Everyone who does it city after city says the same thing.  If you ever have the chance and find the SB in your town, do it. Trust me.
Cool Ranch CHICKPEAS anyone? While some (most) p Cool Ranch CHICKPEAS anyone?  While some (most) people are likely to be shoveling Cool Ranch Doritos down the batch tomorrow... we’ll be whipping up a batch of these Cool Ranch CHICKPEAS!  Yeah, I know. It’s kind of obnoxious because Cool Ranch Doritos are the sh^%. But these at least give you that same zesty flavor and way more than nutrients. I’m kinda obsessed!  Or just eat the Doritos. 🤷🏼‍♀️  While we’re talking chips? What’s your fave? I think mine are the Cool Ranch Doritos.. what can I say...
