When I was younger I always thought there was a magical switch when you get older in which you suddenly become an adult. This belief was held firm and throughout high school I thought that switch would be turned on in college. And in college I thought that switch would be turned on in my 20’s. Instead I partied more than I ever did in college and realized that switch must get turned on when I settled down and got married. Nope. Never went on. Maybe it was whenI had kids underbought new life into this world. Nope. And here I am today writing a blog post about meatballs, wanting to make a balls joke and realizing that switch is never going to turn on.

Sure, I’m way more responsible and mature since all of those life events have occurred but a full-fledged proper adult I am not.

And that makes me so happy. All my life I thought that switch would kick in and life would get boring. I’d stop dancing around the house, singing out loud in my car and start wearing polyester jog suits clothes for the rest of my life. None of that has come to fruition and I’ve let out a huge sigh of relief. Although I did recently purchase the best ever high-waisted pair of mom jeans one could imagine and love them. I think Gigi Hadid wears them so maybe they’re cooler than I think. 😉

Anyways, yes balls. Balls, meatballs, juicy meatballs, balls, balls, ball. I’m done. Back to “adult-ing” and talking about this recipe.

So curry… Whole30… these are so good. So easy… gah. BOR-ing.

Actually. I want to keep talking about all of the ways I haven’t yet turned into an adult yet. You know know how to make meatballs. Add the spices, mush up the meat using your hands and roll them into balls. Got it? Cool.

I also still am not great about making my bed every day. My husband usually does. I should. I’m not a slob. I love my room picked up, smelling good and peaceful. But ugh, making the bed. It’s my own fault for buying so many components to it. There’s the blank that’s supposed to peek out from the comforter, the coverlet that’s supposed to come over the comforter just so. It’s a pain in the ass but it’s my own fault.  And the irony of it being pretty, complex and untouchable but never made doesn’t fall short on me.

I also still get some of my clothes at Abercrombie (word up to all you former brand reps out there), Brass Plum, Urban Outfitters and more. And they have some super cute stuff and great sales! I’m not down with it all mind you. Brass Plum has great jewelry and sunglasses, ANF (insert laughing emoji here) has great shawl-y, winter types of sweaters and Urban Outfitters actually has super cool things for home decor.

I also don’t wash my makeup brushes regularly. Does anyone? I thought adults did. Several of mine are probably even from when I was a teenager.

I still get excited if an N*Sync songs comes on the radio and think there’s no way that song can already be 20 years old. I never check my mail. My postman/lady probably hates me. I say it ensures no one will ever know if we’re on vacation and it’s burglary insurance.

I don’t floss. Like ever really. Except right before I go to the dentist but it never fools them, they always know. But I think I have amazing teeth and a great smile so I’m ok with it.

I say really lame things like OMG, amazing, totally and like all of the time. I write it all of the time too. I’m quite aware that presents my IQ to be much lower than it is. Again, I’m ok with that. I don’t need people asking me how to build their rocket, start a hedge fund or start a fire using just two sticks. I’d rather they just come around because they need a good laugh.

One thing I do do (do-do! Remember that episode of Friends?) is eat like a grown up. Or at least what I thought a grown up was supposed to eat like. Healthy proteins, lots of veggies, minimal cakes etc. So I guess I’m not a compete lost cause after all. Oh! I also wash my face every night now no matter what. But I think that has more to do with my vanity than being a grown up.

Whole30 Curry Meatballs + Sweet Potato Mash

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 garlic cloves minced
  • 1 teaspoons cumin
  • 4 teaspoons salt
  • 1 teaspoon curry powder
  • 1 15- ounce can full-fat coconut milk
  • 1 4- ounce jar red curry paste I like Thai Kitchen
  • 1 tablespoon coconut aminos
  • 1 teaspoon fish sauce
  • 3 pounds sweet potatoes cubed
  • 2 tablespoons ghee or butter
  • 2 tablespoons avocado or coconut oil
  • 1 red bell pepper sliced
  • 1/2 onion roughly chopped
  • 1/3 cup basil chopped

Instructions

  • Add the beef, pork, cumin, curry powder, garlic and 2 teaspoons of the salt to a large bowl and use your hands to combine the ingredients thoroughly. Form the ground meat mixture into 2-inch balls and set aside.
  • Add the cubed sweet potatoes to a large stock pot and fill it with water until it is just covering the potatoes. Heat the pot on high heat until the water starts to boil and reduce it to medium-high heat. Boil the sweet potatoes until they are fork tender.
  • Drain the sweet potatoes from the stock pot and add them to a blender or food processor along with the ghee and remaining two teaspoons of salt. Blend on high until smooth. Set aside.
  • Add the avocado or coconut oil to a large frying pan or dutch oven over medium heat. Once the oil is hot add the meatballs and cook on each side for about 2 minutes until cooked through. Remove the meatballs from the pan and drain them on a paper towel and set aside. You will most likely need to cook the meatballs in 2 or 3 batches.
  • While the meatballs are cooking, add the coconut milk red curry paste,coconut aminos and fish sauce to a saucepan over medium-low heat and whisk to combine.
  • Once the meatballs have all cooked, drain the majority of the liquid and fat from the pan, leaving about 1 tablespoon in the pan. Add the red bell pepper and the onions and sauté them over medium heat for 8-10 minutes until they are softened and the onions are lightly browned.
  • Add the meatballs to the pan or dutch oven, pour the curry sauce over top. Stir to combine and simmer for 5 minutes.
  • Serve the curry meatballs and sauce over the sweet potato mash.

  1. This was a very flavorful recipe! I’m curious if the meatballs could be baked in the oven on a cooling rack – the splatter and time it took to do two batches made this not as quick as I had hoped.
