Whole30 Curry Meatballs + Sweet Potato Mash

Whole30 compliant Curry Meatballs + Sweet Potato Mash. A quick recipe that perfect for busy weeknights and great for leftovers! Paleo and gluten-free.

Whole30 compliant Curry Meatballs + Sweet Potato Mash. A quick recipe that perfect for busy weeknights and great for leftovers! Paleo ad gluten-free.

When I was younger I always thought there was a magical switch when you get older in which you suddenly become an adult. This belief was held firm and throughout high school I thought that switch would be turned on in college. And in college I thought that switch would be turned on in my 20’s. Instead I partied more than I ever did in college and realized that switch must get turned on when I settled down and got married. Nope. Never went on. Maybe it was whenI had kids underbought new life into this world. Nope. And here I am today writing a blog post about meatballs, wanting to make a balls joke and realizing that switch is never going to turn on.

Sure, I’m way more responsible and mature since all of those life events have occurred but a full-fledged proper adult I am not.

And that makes me so happy. All my life I thought that switch would kick in and life would get boring. I’d stop dancing around the house, singing out loud in my car and start wearing polyester jog suits clothes for the rest of my life. None of that has come to fruition and I’ve let out a huge sigh of relief. Although I did recently purchase the best ever high-waisted pair of mom jeans one could imagine and love them. I think Gigi Hadid wears them so maybe they’re cooler than I think. 😉

Anyways, yes balls. Balls, meatballs, juicy meatballs, balls, balls, ball. I’m done. Back to “adult-ing” and talking about this recipe.

So curry… Whole30… these are so good. So easy… gah. BOR-ing.

Actually. I want to keep talking about all of the ways I haven’t yet turned into an adult yet. You know know how to make meatballs. Add the spices, mush up the meat using your hands and roll them into balls. Got it? Cool.

I also still am not great about making my bed every day. My husband usually does. I should. I’m not a slob. I love my room picked up, smelling good and peaceful. But ugh, making the bed. It’s my own fault for buying so many components to it. There’s the blank that’s supposed to peek out from the comforter, the coverlet that’s supposed to come over the comforter just so. It’s a pain in the ass but it’s my own fault.  And the irony of it being pretty, complex and untouchable but never made doesn’t fall short on me.

I also still get some of my clothes at Abercrombie (word up to all you former brand reps out there), Brass Plum, Urban Outfitters and more. And they have some super cute stuff and great sales! I’m not down with it all mind you. Brass Plum has great jewelry and sunglasses, ANF (insert laughing emoji here) has great shawl-y, winter types of sweaters and Urban Outfitters actually has super cool things for home decor.

I also don’t wash my makeup brushes regularly. Does anyone? I thought adults did. Several of mine are probably even from when I was a teenager.

I still get excited if an N*Sync songs comes on the radio and think there’s no way that song can already be 20 years old. I never check my mail. My postman/lady probably hates me. I say it ensures no one will ever know if we’re on vacation and it’s burglary insurance.

I don’t floss. Like ever really. Except right before I go to the dentist but it never fools them, they always know. But I think I have amazing teeth and a great smile so I’m ok with it.

I say really lame things like OMG, amazing, totally and like all of the time. I write it all of the time too. I’m quite aware that presents my IQ to be much lower than it is. Again, I’m ok with that. I don’t need people asking me how to build their rocket, start a hedge fund or start a fire using just two sticks. I’d rather they just come around because they need a good laugh.

One thing I do do (do-do! Remember that episode of Friends?) is eat like a grown up. Or at least what I thought a grown up was supposed to eat like. Healthy proteins, lots of veggies, minimal cakes etc. So I guess I’m not a compete lost cause after all. Oh! I also wash my face every night now no matter what. But I think that has more to do with my vanity than being a grown up.

Enjoy these meatballs and since I didn’t talk all that much about them, hit me up in the comments with any questions you might have. And please share with me all of the ways you are not adulting.

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork
  • 2 garlic cloves minced
  • 1 teaspoons cumin
  • 4 teaspoons salt
  • 1 teaspoon curry powder
  • 1 15- ounce can full-fat coconut milk
  • 1 4- ounce jar red curry paste I like Thai Kitchen
  • 1 tablespoon coconut aminos
  • 1 teaspoon fish sauce
  • 3 pounds sweet potatoes cubed
  • 2 tablespoons ghee or butter
  • 2 tablespoons avocado or coconut oil
  • 1 red bell pepper sliced
  • 1/2 onion roughly chopped
  • 1/3 cup basil chopped

Instructions

  • Add the beef, pork, cumin, curry powder, garlic and 2 teaspoons of the salt to a large bowl and use your hands to combine the ingredients thoroughly. Form the ground meat mixture into 2-inch balls and set aside.
  • Add the cubed sweet potatoes to a large stock pot and fill it with water until it is just covering the potatoes. Heat the pot on high heat until the water starts to boil and reduce it to medium-high heat. Boil the sweet potatoes until they are fork tender.
  • Drain the sweet potatoes from the stock pot and add them to a blender or food processor along with the ghee and remaining two teaspoons of salt. Blend on high until smooth. Set aside.
  • Add the avocado or coconut oil to a large frying pan or dutch oven over medium heat. Once the oil is hot add the meatballs and cook on each side for about 2 minutes until cooked through. Remove the meatballs from the pan and drain them on a paper towel and set aside. You will most likely need to cook the meatballs in 2 or 3 batches.
  • While the meatballs are cooking, add the coconut milk red curry paste, coconut aminos and fish sauce to a saucepan over medium-low heat and whisk to combine.
  • Once the meatballs have all cooked, drain the majority of the liquid and fat from the pan, leaving about 1 tablespoon in the pan. Add the red bell pepper and the onions and sauté them over medium heat for 8-10 minutes until they are softened and the onions are lightly browned.
  • Add the meatballs to the pan or dutch oven, pour the curry sauce over top. Stir to combine and simmer for 5 minutes.
  • Serve the curry meatballs and sauce over the sweet potato mash.

Could you use green curry paste in place of the red?

This was a very flavorful recipe! I’m curious if the meatballs could be baked in the oven on a cooling rack – the splatter and time it took to do two batches made this not as quick as I had hoped.

Could these be browned first and then put in the oven to finish — at what temp and for how long?

Including myself. After that, I asked people to Including myself. After that, I asked people to elaborate if they were willing. I received hundreds of messages with similar themes. Increases in levels of anxiety, negativity, loneliness. Parents struggling working from home while managing distance learning. Despair, monotony. Unappreciated teachers. People experiencing loss of loved ones on top of it all. Changes in tolerances levels of what we were willing to accept in relationships and society. Reevaluating careers, relationships and more. Reading all of your messages, I kept finding myself saying “Uh huh, yep, totally, me too”. I didn’t feel so alone in this and wished I could share all of the responses with you as well. So let’s do it here. If you’re comfortable, share in the comments how you’re feeling. Others are in the same boat and it helps knowing you are not alone. In the meantime, it’s something to start turning around. For all of us, and I firmly believe we can. I’m planning to start finding guests and topics for @getwellthypodcast that will help us address this. I’m also going to share one (little) thing on my stories every day that brings me joy or happiness. My hope is that it will help trigger something in *your* day that brings you joy that you can focus on. I encourage you to share your moments and tag me as well. I firmly believe all of this will make us stronger in, we just need to actively pull out of this to get there.

Like this Thousand Island Wedge Salad. 🥰 I love me a wedge salad but sometimes hate that it doesn’t feel like a complete meal... so I changed it up a bit and added some egg for protein. And bacon because... bacon! What do you think? Are you in salad season yet or still on soup season? I know it’s all about Brady and Gronk right now I know it’s all about Brady and Gronk right now (blah) but here’s a throwback to when @thepetitepanaderya and I got to be a part of the SB Halftime field team crew in 2016. It has always been on my bucket list to be on the field for the Halftime show, so when SB was here in Santa Clara, I was going to find a way. I saw you could sign up to be a part of the field team that puts together the stage so I signed up. It was two weeks of practicing and they paid us minimum wage, although I would have done it for free. A few hundred people were part of it and we were each assigned to a “cart”. We were taught exactly what to do, how to assemble the various parts of the stage and QUICK. It all had to be put together in around 7 minutes. We weren’t allowed to have any cell phones out during practices and signed confidentiality waivers. The second week we got to watch the performers rehearse (over and over again). JayZ and Blue Ivy were in the stands watching. Bruno Mars was perfection and nailed everything every time. I was blown away at how talented he was live. Chris Martin was so kind. Beyoncé drove in front of us in her golf cart and waved. She also made us wait in the freezing cold while she tried different hair and fan / wind blowing situations. Game day. There was a staging area a few miles away that we met at and we were bussed in with police escorts down the 101. Once at the stadium we hung out with our carts waiting our turn. Everyone was so pumped. As SOON as the second quarter ended it was go time and the adrenaline was pumping. Seriously, that feeling was awesome. Lucky for us, once we finished building our cart we had wait on the sidelines... right in front. The energy was intense and I loved every minute of it. Bigger picture, seeing how everyone worked together flawlessly to create the performance was striking. I’ve never experienced teamwork like this and never thought it would be such an impactful experience. It was one of the BEST things I’ve ever done as silly as it sounds. Everyone who does it city after city says the same thing. If you ever have the chance and find the SB in your town, do it. Trust me.
Cool Ranch CHICKPEAS anyone? While some (most) p Cool Ranch CHICKPEAS anyone? While some (most) people are likely to be shoveling Cool Ranch Doritos down the batch tomorrow... we’ll be whipping up a batch of these Cool Ranch CHICKPEAS! Yeah, I know. It’s kind of obnoxious because Cool Ranch Doritos are the sh^%. But these at least give you that same zesty flavor and way more than nutrients. I’m kinda obsessed! Or just eat the Doritos. 🤷🏼‍♀️ While we’re talking chips? What’s your fave? I think mine are the Cool Ranch Doritos.. what can I say... Now I’m feeling like I sold you on the Doritos rather than the chickpeas! Whoops. Anyways. Recipe for the CHICKPEAS in my bio. https://www.thewholesmiths.com/cool-ranch-roasted-chickpeas/
