Switch up your usual breakfast routine with this Sweet Paleo Breakfast Frittata with Apples & Cherries 

I’m under the guise that people fall into one of two categories… Sweet Breakfast people or Savory Breakfast people. Isn’t it usually one or the other for the most part?

Like when you go out to breakfast, there’s the person that gets the french toast or the person that gets the eggs benny. For the most part. Maybe it’s more of a Venn diagram though, a few people can go both ways.

If I was a better graphic designer I might be able to create that image for you. But I’m not, so you’ll just have to use your imagination. 😉

ANYWAYS! I used to be that sweet person at breakfast. I loved any and every sweet breakfast item out there.

French toast (obvi), waffles, muffins, Svenhard’s cheese danishes (gross and oddly delicious at the same time) and on and on.

But since I’ve changed up my diet to be more paleo-based, those breakfast items have disappeared and savory dishes have become my go-to. And I love it!

But I do find myself craving something sweet but not heavy and carb-y still. That’s when I decided to go for the sweet frittata.

I don’t think people realize how good eggs can be when they’re sweetened up, they’re quite delightful I tell ya!

So I naturally added some fruit and presto, I had myself a nice lightly sweetened (let’s be real here, it’s no Krispy Kreme) breakfast and the kids loooove it.

I can usually pull leftovers out of this if I serve it with a smoothie or something.

And if you’re looking to make this healthy sweet breakfast frittata Whole30, make sure to use coconut oil and bypass the honey.

How to make healthy Breakfast Frittata with fruit: 

 

Start by preheating your oven to 375*, then peel, core and slice your apples.
Heat some oil in a medium pan and add the apples and a bit of honey.
 
Cook until softened and lightly browned and remove the pan from heat. Now lightly grease a ceramic baking dish with butter or coconut oil.
 
In a separate bowl whisk eggs, honey, vanilla and cinnamon together. Arrange the pre- cooked apples along the baking dish carefully layering and adding cherries as you go.
 
Once apples and cherries are arranged, pour the egg mixture over top
 
Now, gently shake the dish so that the egg mixture is evenly distributed and bake for 30-35 minutes*
 
Let your breakfast frittata rest for about 15 minutes prior to serving to let eggs set

Tips for making paleo fruit breakfast frittata:

 

  • Baking time will depend on the size and depth of the baking dish you use. Baking dishes vary wildly in size but this is a good general guideline. Shallower dishes will have less time than deeper dishes.
  • For a Whole30 fruit frittata, use coconut oil and skip the honey. Sprinkle with Ceylon cinnamon for sweetness.
  • Feel free to change up the type of fruit you use and some drizzle maple syrup on top for extra sweetness.

 

Can I freeze this fruit frittata? 

 Yes, you can. Let leftovers or the whole frittata come to room temperature. Cover and refrigerate it for several hours or overnight.

Place the frittata in one or several freezer bags in the coldest part of the freezer for several hours or until completely frozen.

Once solid, you can move the frittata to another area of the freezer. It should last for 2 to 3 months.

  • 4 Granny Smith apples
  • 1 Tbsp. butter or coconut oil
  • 1/4 C. pitted cherries fresh or frozen
  • 8 eggs
  • 3 Tbsp. honey
  • 2 tsp. vanilla
  • 1 tsp. cinnamon

  2. I would like to make this in a Whole30 compliant version. Above it says, “if you’re looking to make this Whole30, make sure to use coconut oil and bypass the honey” but I don’t see any honey in the recipe. Is the coconut oil in place of the coconut sugar? And, is vanilla compliant? Thanks for clarifying.

    1. Ok so to make it Whole30 you will want to make sure to use coconut oil instead of butter. You can see in the ingredients that you have either option, stick with the coconut oil as that’s compliant! Ad far as the honey / coconut sugar mix up, when I updated my website some of the old revisions of recipes populated. I used to make it with coconut sugar but found honey is even better. I update it to show honey now. BUT if you are doing a Whole30 leave that out all together. Make sense?

  4. This looks amazing – I’m going to try it this weekend! I’m currently doing a Whole30 (my 3rd!) and this will help break up the monotony of eggs eggs eggs for breakfast lol! I’m considering adding in coconut milk. Traditionally frittatas have dairy to them to help make the beautiful, custard, creamy consistency. Did you experiment with this at all? If you already tried it and omitted it for a reason, I’d like to know before I deviate from your recipe – because I will be sad if I have a fail 🙁

  7. This is one of my favorite breakfast recipes. I’ve made it over a dozen times. When I don’t have apples, I use pears, especially when I buy a big bag and they all ripen too quickly at the same time. I use Trader Joe’s jarred cherries when the fresh fruit isn’t in season. I don’t like the taste of honey or sugar so I’ve used 1 tsp of maple syrup in place and each time it turns out really tasty. Tiny adjustments but the original idea is simply wonderful. Great job!

  8. I am obsessed with this recipe! Thank you for sharing. I slice my apples very thinly using a mandolin slicer (watch your fingers!!) and add some salt, as well as splash of the plain or vanilla nutpods to the egg mixture. It is a dead-ringer for traditional Jewish noodle kugel (which usually has noodles, obvi) because of the texture of the thinly sliced apples. I’ve also made with raisins instead of cherries when I couldn’t find any good cherries. Sooo goood! Thank you!

  10. This. Is Delicious. !!! I’m one who loves a sweet breakfast and it’s hard finding something that is sweet, healthy, and filling. This dish hits all those notes with the fruit and honey. The eggs provide the filling aspect. I’ve made this several times now and each time I marvel about how yummy it is. Pro Tip: Buy frozen cherries, the yare already pitted!

  11. This is a great “sweet” option for gluten and dairy free diets. We make it often for Sunday brunch and my whole family (gluten & dairy eaters) love it as well.. Most of the time there aren’t any leftovers, but when there are- the leftovers reheat very well.
