I make this for our family once a week (sometimes more) and they never complain that there sick of it! Not only does it take minimal effort to make but it preserves perfectly for leftovers. In fact, I’d say it tases even better after a day or so when the flavors have enough time to mesh together.
It’s a nutrient dense, quick lunch that’s super hearty and won’t leave you with a case of food coma. If you’re wanting to add some extra protein to it, go for it. I recommend shredding up some rotisserie chicken and adding it when served.
