frozen cherries + coconut milk “jubilee”

So I’ve been making this mess of a “dessert” for months now. Pretty much ever since Costco started selling ginormous bags of frozen cherries. It’s actually become kind of a problem for me,  like I’m obsessed with eating it. There’s been so many nights that I can’t wait to put the kids to bed so I can sit down with a bowl of these and eat every little bite up. Then go make myself another bowl. See? It’s a PROBLEM PEOPLE!!

I digress. I never thought to make it into a blog post because it just seems too easy to make and not worthy of an entire post all to itself. But this last week I posted a crummy iPhone photo of it to my Instagram and got so many comments! I figured why not! Who cares if it’s easy, it’s an idea and it’s something people will looove.

I realize now that I really have no idea what a “jubilee” really is, but that’s ok. I like the word and am gonna leave it. 🙂 Even if this is nothing like a jubilee! And no, I don’t want to Google it and see what it is and burst my bubble.

And (hypothetically speaking of course) if I ever ran out of cherries and really wanted more, this is GREAT over frozen pineapple too! Like sitting on a beach in Hawaii slathering that delicious coconutty suntan lotion all over you. I mean, hypothetically of course! 😉

Make sure you wait a minute or so before you dig in and let the coconut milk form a nice frozen shell around the cherries. And if you’re someone who eats your candy in a particular way, you’re gonna love this even more. You know who you are. The ones that eat the chocolate edges around a Reese’s first, or when you’re eating a Cadburry Mini Egg, you gently crack the candy shell while it’s in your mouth first then move on to the rest. You know what I’m talking about. And if you don’t… well, you’re probably the weirdo. 😉

Last bit, customize this how you will. If I don’t have chocolate chips at the house I’ll sometimes ad a small drizzle of honey over the top. And truthfully it depends on if Costco has TART frozen cherries or SWEET frozen cherries on deck. They keep switching it up on me. To the untrained eye, I’m sure most people never notice. But me? Yeah, I clearly do.

Frozen Cherries + Coconut Milk Jubilee

Frozen cherries smothered in coconut milk and mini chocolate chips.

Ingredients

  • 1 c. frozen cherries
  • 1/4 c. coconut milk
  • Enjoy Life Mini Chips optional to taste
  • honey optional

Instructions

  • Pour cherries into bowl
  • Drizzle coconut milk over frozen cherries until the coconut milk starts to freeze
  • Toss cherries to coat and let frozen shell form
  • Sprinkle with mini chocolate chips and or small drizzle of honey
  • Make another bowl!

    What kind of coconut milk are you using?? The canned or refrigerated kind? I tried the canned, but it looked nothing like yours!!! Figured I’d check for next time!!!

    I am wondering what type of coconut milk you use. Do you use full fat coconut milk from a can or a carton of coconut milk. This looks delicious and I am excited to try it!

Obsessed. Let’s talk...🛌🥱 In early 2020 I Obsessed. Let’s talk...🛌🥱In early 2020 I polled my audience because we were on the hunt for a new mattress. You overwhelmingly recommended @avocadogreenbrands. And then we all got locked down and I put our mattress hunt on hold. I bought a cheapie mattress online instead since we couldn’t try things out and none of us had any clue what was happening. Big mistake. HUGE. It was the worst mattress ever. So earlier this year we decided it was time to get a PROPER GROWN UP MATTRESS and went with @avocadogreenbrands.I’m not going to lie, I was a little nervous about ordering online and not being able to “test” it in person. I’m here to tell you it’s one of the best things in my life. It is THE MOST comfortable mattress I have ever laid my pretty little face on. And Brad agrees.Not to mention is green and environmentally friendly.Legit, slipping into bed at night feels like a hug from heaven and I can’t even handle it. I told Brad that, God forbid, we ever divorce I’m taking the mattress with me. So, if you are on the hunt go with @avocadogreenbrands. We went with the Avocado Green mattress with pillow top.
