Frozen “Oatmeal”
This idea came to me last week when temperatures reached near 100* here in the Bay Area. It was morning and our house STILL hadn’t cooled off from the day before. I was wanting something hearty yet still cool and somewhat refreshing. I’d also recently bought a new cookbook on smoothies and I had noticed that a ton of the smoothies had nuts added to them, something I had never tried before. The wheels in my head started churning and there you have it! Smoothie and oatmeal? A smoatmeal? That name doesn’t sound too catchy and search engines will shut down if I called it that, so frozen oatmeal it is! A dairy-free, grain-free, delicious, oatmeal substitute.
This is such and easy ad healthy paleo breakfast to start your day. What I like about this over traditional oatmeal is that it won’t spike your blood sugar and I don’t feel hungry shortly after. I usually pair this with a couple of eggs and I stay full until lunchtime. Even better, I never have a problem getting the kids to eat it so I don’t start my day off grumpy and struggling with them. Wins all around people!
