pineapple broccoli slaw
To put it bluntly, I have the worst knife skills ever. I will be shocked if I don’t need stitches by the end of the year for all of the chopping I’ve been doing lately. And it takes me so long to prep / chop veggies. Like painfully long. I hate chopping veggies. So when I found Trader Joe’s pre-chopped Broccoli Slaw, I was in luck! Eating it plain and by itself? Well, it’s pretty terrible. Don’t do it. Instead, I figured out a great slaw you can make and it’s just in time for Memorial Day Weekend.
I’m all about brainless recipes and this is pretty much as brainless as it gets. If you want to get crazy with it, add some extra raisins. Or if you’re really racy, some extra mustard. The nice thing is that the homemade mayo adds so much more flavor to the slaw than you’ll ever get with a store bought.
pineapple broccoli slaw
Ingredients
- 1 bag Trader Joe's organic broccoli slaw
- 1/3 C. homemade mayo
- 3/4 C. freshly chopped pineapple
- 1/4 C. raisins
- 1 T. whole ground mustard
- salt and pepper to taste
Instructions
- Toss all of the ingredients into a bowl and combine well.
So we’ve been making this quick easy side dish since you first posted this recipe years ago, and on a pretty regular basis too! My four kids 1-8 LOVE THIS!! Especially when it’s served alongside your mango jalapeño chicken meatballs! I’m sorry it’s taken me so long to say, THANK YOU!
