I’m not going to lie. When my kids first saw us cutting up a spaghetti squash for dinner, they complained. A lot. They “hate spaghetti squash”, “it’s not even real spaghetti”, “I’m not eating that Mom”. Listen, my kids are good eaters but at the end of the day, they’re kids. By default, they’re going to complain. It’s my job to learn when they are just complaining to complain and be kids or they really have an adversity to a certain food or recipe.
Most of the time, they’re being kids. In this instance, I knew that and told them, well this is what’s for dinner.
And God forbid these kids sat down, forced down this “terrible” spaghetti squash and ABSOLUTELY LOVED IT.
Truth. They went back for seconds and happily ate it as leftovers the next day.
In summary, A. This recipe is an absolutely delicious way to get your veggies in and B. When feeding kids, take a moment to see if they have a true aversion to a particular food or they’re being like every other kid out here and just wanting pizza instead.
