Holiday Chia Puddings

All righty guys, it’s official. The Holidays have arrived. And that means we all have about 5 million things to get done, am I right? So with that being said, I’m going to keep this post short and sweet and give you what you really came here for, the recipe. I have a million presents to get wrapped and I’ll just say this trio of chia puddings speaks for itself.

I created a paleo egg nog recipe for Blendtec recently and you can find that recipe here, that’s the recipe you’ll need to reference in order to make your eggnog chia pudding.

A dairy free egg nog, chocolate peppermint and pumpkin pie chia pudding.

Ingredients

  • FOR EGG NOG
  • 1 cup paleo egg nog reference link in post
  • 1/3 C. chia seeds
  • FOR CHOCOLATE PEPPERMINT
  • 1 C. full fat coconut milk
  • 2 Tbsp. coconut sugar
  • 1/2 Tbsp. cocoa powder
  • pinch of salt
  • 1/2 tsp peppermint extract
  • 1/3 C. chia seeds
  • FOR PUMPKIN PIE
  • 1/2 C. full fat coconut milk
  • 1/2 C. almond milk
  • 1/2 C. pumpkin puree
  • 1/4 tsp. vanilla
  • 1/4 tsp. pumpkin pie spice
  • 1/3 C. chia seeds
  • pinch of salt

Instructions

  • FOR ALL VARIETIES
  • Stir chia seeds into other ingredients thoroughly and place in refrigerator
  • Stir after 2 hours and return to refrigerator
  • Continue to refrigerate for a minimum 5 hours until pudding has thickened
