Mango Lassi Popsicle + Smoothie

I’m all about smoothies for breakfast OR dessert. They’re so easy and you can usually just dump in whatever fruit or veggies you have on hand. I always try to keep a Ziploc full of frozen bananas in the freezer because they make a great creamy base for whatever I’m about to add.

I wanted to try something new and recreate the flavors in an Indian Mango Lassi. The original is yogurt or cream based. This version is much lighter and.. PALEO!

The best part? Once you’ve mixed it up you can either enjoy it as a smoothie or freeze some in popsicle molds and you have a healthy frozen treat you can feel good giving the kids!

And here we go!

Paleo Mango Lassi Popsicle

Ingredients:

2 C. frozen mangoes

1 frozen banana (or 2 for a creamier version)

1 C. coconut milk (I love Trader Joe’s)

1 C. almond milk

1 Tbsp unsweetened shredded coconut

1 tsp pumpkin pie spice

Directions:

Add all ingredients into the blender and blend until smooth. If you’re making popsicles, add to molds and freeze for 3 hours.

And that’s it! Easy, delicious AND healthy. Even better it won’t turn your mouth bright red! Or even worse… BLUE! Uuuugh!! (Side bar.. there’s nothing worse than an adult with a dyed mouth, right?!?)
